Herbed Tuna

Ingredients:

  • 1 four lb can of Tuna in water
  • 2 large onions quartered
  • 1 tablespoon freshly ground black pepper
  • 3 tablespoons of Lemon juice
  • 3/4 of an oz of fresh Thyme (dried Thyme leaves are not as pungent and flavorful)
  • 2 cups of real mayonnaise

Method:

  1. Drain Tuna thoroughly, shaking in colander often to release trapped water
  2. Chop onions in blender with half of the mayonnaise
  3. Strip Thyme leaves from stalks
  4. Place Tuna in a large bowl and sprinkle black pepper, fold in gently
  5. Add onion-mayo mixture and fold in gently
  6. Add 3 tablespoons of Lemon juice
  7. Sprinkle stripped Thyme leaves and fold in to Tuna
  8. Add the remaining cup of mayonnaise and mix well

  • Garnish with a medley of red and yellow sweet pepper if desired
  • Serve with bread, water crackers or corn chips.
  • This Tuna recipe makes great sandwiches or a very pleasant appetizer.

This dish is best when made 24 hours in advance so the fresh Thyme oils can infuse the Tuna, it keeps exceptionally well in the fridge and can be easily kept for a few days
